I think I have the solutions for you for the the larger rear sprockets that at the same time will make it easy for you to test which combination is the right one for your riding style and for that track.
Sitta sell a Quick Change Racing Kit that come with all the lager rear sprockets you mention above.
They even offer it in the 525 chain and 520 chain:

However, based on the huge horsepower that our Panigale V4 engine produce, I would not recommend you to use the 14 front sprocket because it will put a lot of strain to the chain and sprocket since it have less tooth engaged at any given time.
It's best to have a few teeth larger rear sprocket to get the same effect.
Unfortunately, I am not racing my bike or even riding my bike, but most of the people in this forum or other forum is not really a pro racer anyway, so their advice on the sprocket size will VARY widely depend on their skill and the track they are comfortable with.
However, buying the kit below will allow you to quickly change your rear sprocket and test it to your liking (make sure you cut the chain to the right length which will allow adjustment of the eccentric hub without replacing the chain).
Only you and your own testing can get the right gear setup for you. Having said that, you can start small by increasing the rear sprocket 1 or 2 sizes larger than your current V4R stock sizes (I forgot the stock V4R sprocket stock sized and I really in a hurry now so I don;t have time to check).
